I’m not ready to let go of summer, are you Dear Reader? Let’s toast the dying rays of sun, cardigan clad, with this fresh cocktail that contains the greatest liquor known to man, gin. It’s married with cucumber, mint, lemon and ginger beer and a hint of tomorrow’s hangover to make The Merry Death cocktail.

It’s been brought to my attention that this blog is heavy on the food, but I haven’t touched on the gin aspect, as promised in its title. Well, it’s time to rectify that and named for friend who has nagged me constantly about the lack of gin on this blog, I give you The Merry Death.

Ingredients

Green is my favourite colour, gin is my favourite drink, this cannot fail.

  • 2 shots of gin (I used Gordon’s, but Hendrick’s would work very well with this cocktail)
  • A small handful of mint leaves, washed and picked
  • 5 thick slices of cucumber
  • 1 slice of cucumber skin to garnish
  • Ginger beer
  • The juice of 1 lemon

Method

You need more cucumber than pictured, but I have small hands #struggle

Looks terrible, will taste amazing, trust me.

Combine the mint leaves, the juice of the lemon and cucumber in a blender or food processor. Blend until completely smooth. Remove from blender and pass through a sieve, this should give you about 100ml of liquid. Discard any pulp and divide the liquid between two gin glasses. Add two shots of gin to each glass and top with ice and ginger beer. Garnish with a twisted cucumber skin.
